The Berry That Care’s Easy to Make Recipes

They’re antioxidant-rich and packed with vitamins, they’re sweetness makes us want to add them to almost everything. Whether it’s for breakfast or tea time, blueberries are so versatile they can be combined into tangy cakes or syrupy jams. We visited The Berry That Cares’ kitchen to find our expert cooks combining our plump berries with the basics to make these perfect sweet-tooth craving recipes. Try them out and you’ll find just the right duo of delicious and nutritious.


BLUEBERRY JAM

Ingredients:

  • 2 kilos blueberries
  • 1 kilo sugar

How to make it

  • Combine blueberries and sugar in large saucepan and place over low heat.
  • Continue to stir until juices begin to flow from berries (about 10 minutes) then increase heat to high.
  • Continue to stir as mixture gently boils, until eventually reaching desired thickness.
  • Allow to cool completely before using in a recipe.
  • Store in refrigerator in sealed jar or container.


BERRY GOODNESS CAKE

Ingredients:

  • 3 Cups flour
  • 3 Tbsp baking powder
  • 1 Cup sugar
  • 1/2 Cup milk
  • 4 eggs
  • 200 gm butter (room temperature)
  • 1 Cup blueberry jam (cooled)

How to make it

  • Preheat oven to 150C. Grease a large baking dish with butter or vegetable oil and set aside.
  • Combine dry ingredients (flour, baking powder, sugar) in a bowl and set aside.
  • In a small bowl, mix the wet ingredients (milk and eggs) until thoroughly combined and set aside.
  • In large bowl or standing mixer, stir the the butter until smooth then mix in the wet ingredient mixture.
  • Slowly incorporate dry ingredients to mixture, scraping down sides of bowl every now and then.
  • When mixture is consistent, gently fold in blueberry jam until batter is the color preferred (an overall purple, or marbled light yellow and purple).
  • Add to prepared baking dish and bake in oven for 35 minutes. Remove from oven and allow to slightly cool before slicing. Top with additional blueberry jam.
There’s nothing more satisfying than grabbing a handful of fresh berries and knowing they come straight off the bush. But a blueberry’s journey from field to table requires more than just a skillful hand. A few factors attribute to our product being as plump and fresh as it is.
